Three equal dough balls from the same batch after 24, 48, and 72 hours in the refrigerator.
Forty-eight hours is my usual cold-fermentation schedule. I use it because I know how the dough normally feels when I take it out of the container, open it on the counter, and move it into the oven.
Still, I wanted to see the three common schedules next to one another. I made one batch of dough, divided it into equal 230 g portions, and refrigerated them for 24, 48, and 72 hours. I then gave each portion a three-hour covered warm-up before stretching and baking it.
The result was not a simple good-better-best progression. The 24-hour dough was tighter, the 48-hour dough released and opened cleanly, and the 72-hour dough was softer but easier to stretch too thin.
Quick answer: In this test, 48 hours gave me the best balance of relaxation and strength. The 24-hour dough was usable but needed more patience during opening. The 72-hour dough did not tear, but it was softer, less forgiving, and easier to stretch too thin. Longer fermentation produced a different dough, not an automatic upgrade.
How I Set Up the Test
I wanted the three portions to begin in the same place, so they all came from one batch and followed the same preparation.
1. I mixed one batch using the same flour, hydration, salt, and yeast.
2. I left the finished dough at room temperature for about one hour.
3. I divided it into equal 230 g portions.
4. I rounded each portion and placed it seam-side down in a lightly oiled KEVJES 500ml Classic dough proofing container.
5. I closed each lid completely and refrigerated the portions together.
6. I removed one container at 24 hours, another at 48 hours, and the final one at 72 hours.
7. I kept each dough ball covered for approximately three hours at room temperature before opening it.
Most of the time, the refrigerator was around 40°F (4.5°C). The spot readings when I removed the three portions were 39.6°F (4.2°C), 40.1°F (4.5°C), and 44.1°F (6.7°C). The last reading was temporary, not the temperature maintained through most of the three days. I am including it because a home refrigerator cycles. For routine food storage, the FDA recommends 40°F (4.4°C) or below.
The kitchen was about 80–82°F (26.4–28°C) during the 24- and 48-hour tests and approximately 83°F (28.5°C) during the 72-hour test. The warmer final day may have helped that dough soften more quickly.
My electric pizza oven allows separate top and bottom settings. I used 572°F (300°C) top heat and 617°F (325°C) bottom heat for all three pizzas.
This was a same-batch home-kitchen comparison, not a laboratory test. Time was the main planned difference, but the recorded temperatures are part of the result.
All three dough balls weighed 230 g and came from the same batch. The refrigerator stayed near 40°F for most of the test.
What Changed After 24, 48, and 72 Hours
The photographs show the gradual change in the dough, but appearance was only one part of the comparison. I also paid attention to release, shrinkback, stretching, the baked crust, and the way each pizza tasted.
After 24 Hours: Tighter and More Elastic
After a three-hour covered warm-up, the 24-hour dough still felt tighter and showed more springback.

The 48-hour dough was the easiest portion to handle from beginning to end. After warming, it released cleanly from the flexible container and felt soft without feeling weak.

That is why 48 hours remains my normal schedule. It gave me the widest working margin in this batch.

The 72-hour dough was softer than the 48-hour portion. It no longer fought the stretch, but it was also easier to move too far before I noticed.

These results describe this batch, this refrigerator, and these room conditions. A different flour, yeast quantity, hydration, dough temperature, or refrigerator can shift the timeline.
Why Refrigerator Temperature Matters
Cold fermentation slows yeast activity; it does not stop it. A dough held near the warm end of refrigerator temperatures can move faster than the same formula held several degrees colder.
I would not copy a 72-hour schedule without checking the recipe and refrigerator. Some recipes are formulated for a longer window. Ooni's cold-proof dough, for example, adjusts the yeast for a 24-to-72-hour schedule. That timing belongs to that formula.
If I were troubleshooting this test again, I would place a refrigerator thermometer beside the containers and record more than one reading. A single reading at removal tells me what the refrigerator was doing at that moment, not what happened during every hour of the ferment.
I Still Judge Readiness After the Warm-Up
The refrigerator photograph is useful, but I do not stretch the dough straight from that photograph.
I keep the container closed while the dough warms. Then I look at the whole picture: whether it has relaxed, how it responds to a gentle press, whether it releases as one piece, and whether it opens without snapping back or becoming fragile.

Three hours worked as a consistent warm-up for this comparison, but it is not a universal requirement. In a cooler kitchen, the dough may need longer. In a very warm room, especially after a longer ferment, I would begin checking it sooner.
Which Fermentation Time Would I Choose?
For this recipe and my usual routine, I would choose 48 hours again.
I would use 24 hours when I wanted pizza sooner and could give a tighter dough more patience during opening. I would use 72 hours only when the yeast level and temperature suited the longer ferment and I was prepared to handle a softer dough. The useful lesson is not that 48 hours always wins; it gave this batch the balance I wanted.
Choose a Container With Enough Headroom
All three 230 g portions went into KEVJES 500ml Classic dough proofing containers. That size is intended for approximately 180–250 g dough balls and gave each portion its own covered space during the test.

Container size does not control fermentation, but enough headroom makes the dough easier to monitor and keeps it from pressing firmly against the lid as it expands.
